This delicious sandwich is a replica of a favorite chicken sandwich from a fast food restaurant, but making it at home gives you the ability to control the quality of the ingredients that you put into the meal so you can feel good about serving it to your parents. Even if you have never had this type of meal from a fast food restaurant, you, your parents, and their home care provider can enjoy this spicy meal and its benefits, including lean protein from the chicken, vitamins and minerals from the vegetables, and healing, metabolism-boosting effects from the peppers.
What You Will Need

  • 4 slices of tomatoes
  • 4 lettuce leaves
  • 8 teaspoons of mayonnaise
  • 4 plain hamburger buns
  • 4 chicken breast fillets
  • 1/8 of a teaspoon of garlic powder
  • 1/2 of a teaspoon of paprika
  • 1 teaspoon of onion powder
  • 1 teaspoon of fresh coarse black ground pepper
  • 4 teaspoons of cayenne pepper
  • 2 and 1/2 teaspoons of salt
  • 1 cup of all-purpose flour
  • 2/3 of a cup of water
  • 1/3 cup of red hot pepper sauce
  • 6 to 8 cups of vegetable oil
  • A deep fryer
  • A small bowl
  • A shallow bowl
  • A meat mallet
  • Kitchen shears
  • A cooling rack
  • Paper towels
  • A skillet

What to Do

  • Slice the tomatoes and set aside
  • Preheat the vegetable oil in the deep fryer to 350 degrees F
  • In a small bowl, combine the water and pepper sauce
  • In the shallow bowl, combine the flour, salt, black pepper, paprika, onion powder, cayenne pepper, and garlic powder
  • Use the meat mallet to pound the chicken to about 3/8 of an inch
  • Trim the chicken until it will fit neatly on the bun
  • One at a time, coat a fillet with flour, then dredge it in the pepper sauce
  • Coat the chicken again with flour and then set it aside
  • Repeat until all chicken is coated
  • Fry the chicken between 8 and 12 minutes, or until they are crispy and light brown in color
  • Place the paper towels on the cooling rack
  • Remove the chicken when cooked to the paper towels and allow to drain
  • While the chicken cooks, place the skillet on medium heat
  • Grill the face of each hamburger bun on the skillet
  • Spread 2 teaspoons of mayonnaise on the face of each inverted top bun to taste
  • Place a tomato slice on the bun, in the mayonnaise
  • Stack a lead of lettuce on top of the tomato
  • On each of the bottom buns, place one piece of chicken
  • Flip the top half of each sandwich onto the bottom half and serve while still hot

Extra tip: Let this recipe fit into your plant-based diet with your aging parents by replacing the chicken with seitan and trading out the mayonnaise for a vegan version.
