June 4 is Applesauce Cake Day, the perfect chance for you to indulge your senior loved ones with a deliciously moist cake that cuts the fat, calories, and cholesterol. This is a fabulous dessert to enjoy after a light summertime dinner or to put aside for your seniors to have with their elder health care services provider as a snack or treat.

  • 1 cup flour
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 cup unsweetened applesauce
  • 1/4 cup plus 1 teaspoon water
  • 1/4 cup plain nonfat yogurt
  • 2 egg whites
  • 1/2 teaspoon almond extract
  • 1/4 cup raisins
  • 1/4 cup confectioner’s sugar

What to Do

• Preheat the oven to 350 degrees

• In the large mixing bowl, combine the all-purpose flour, granulated sugar, cornstarch, and dry spices

• In the medium mixing bowl, beat the egg whites with the whisk until no longer translucent

• Stir in the 1/4 cup water, almond extract, and yogurt

• Combine until consistent

• Add in the applesauce and mix with the rubber spatula until all of the wet ingredients are combined

• Pour the wet ingredients into the dry ingredients and stir with the rubber spatula until the batter is smooth, consistent, and free of lumps

• Carefully fold in the raisins

• Prepare the baking dish by spraying with nonstick baking spray. This is different from conventional cooking spray because it has flour in it, which makes it easier to release the cake from the pan. If baking spray is not available, coat the pan with cooking spray or oil and lightly cover with flour

• Pour the batter into the pan and tap gently on the counter to release any air bubbles and make the batter smooth and even

• Bake the cake for between 20 and 30 minutes or until it is golden brown and a butter knife or toothpick inserted in the center comes out clean

• While the cake is baking, combine the confectioner’s sugar and 1 teaspoon of water in the small mixing bowl until smooth. For extra flavor, add 1/4 teaspoon of lemon juice

• Remove the applesauce cake from the oven and allow to cool for 10 minutes

• Drizzle the confectioner’s sugar mixture over the cake and allow to cool completely before serving

• As an indulgent alternative, serve the applesauce cake warm with a scoop of fat-free vanilla ice cream and a sprinkle of cinnamon

You can customize your applesauce cake to suit your parents’ tastes. Try adding grated carrot, grated zucchini, golden raisins, chopped apricots, chopped dates, or chopped prunes. For extra variety, try a natural flavored applesauce variety such as strawberry, pear, or cherry.
